01 · Market analysis

Japanese food is loved.Premium casual Japanese is rare.

A Japanese café chain: hand-rolled sushi at the counter, matcha whisked to order, fruit sandos and dorayaki, served in calm spaces framed by Mount Fuji at dusk and the pink of a Japanese autumn.

Signal 01

Japanese food and culture (anime, ramen, sushi, matcha) has grown fast among young urban Indians.

Signal 02

Matcha has moved from specialist tea rooms into mainstream café menus.

Signal 03

Good sushi is mostly found in hotel restaurants or fine dining; casual premium options are rare.

Where the space is

A café with real Japanese craft in sushi, matcha and bakes, designed as a calm place to pause, at a premium the experience justifies.

  • Chain coffeeConsistent, everywhere, interchangeable.
  • Casual sushi deliveryConvenient; inconsistent quality.
  • Matcha cafésMatcha first, little food depth.
  • Hotel Japanese restaurantsExcellent, formal and expensive.

02 · Customer mindset

Who buys it,and why.

Urban 22 to 40-year-olds who love Japanese food and culture, care about craft, and want a café that feels like a short trip to Japan rather than a fast-food counter.

03 · Brand system

For people who are crazy about Japanese food, Sushi Baka is the café where sushi, matcha and Japanese bakes are made with real craft and served in the calm of a Fuji autumn evening.

The name

Sushi Baka is a playful Japanese phrase for someone who is crazy about sushi. ‘Baka’ alone can mean ‘fool’, so the name is used affectionately and always with the refined Fuji system around it. Before a real launch it should be checked with Japanese speakers and cleared as a trademark.

Type

A light, widely spaced sans for the wordmark, with vertical katakana set like a shop noren.

Signature device

Fuji at dusk: one quiet mountain line under a rose-grey sky, used as the window, the stamp and the loading state.
